To understand Botswana, its local culture and food, one must encounter sorghum, the local staple. Seeds are beaten from stalks, sorted, then wind-sifted with traditional woven baskets to remove impurities and dust. Porridge (to be served alongside beef, bean leaves and sour yogurt) and local beer, are made from it. Another #ThisIsChobe experience.
